If there is something that distinguishes the most emblematic and authentic food products of Cantabria, it is particularly their authenticity.
In fact, some producers and manufacturers of the agri-food sector of Cantabria joined almost three years ago in order to join forces and created an export consortium or cluster (Santander Fine Food) that brings together 10 companies from the field. Its objective is to access international gourmet channels as well as to extend the knowledge of their products and gastronomy among the general population, especially, among those who, like tourists or visitors, still do not know about them.
These 10 producers are the following. Café Dromedario and Horno de San José make coffee and the latter also makes chocolates and soluble cocoa; the company Caprichos del Mar is specialized in patés whose main ingredient is fresh fish and seafood; La Ermita is a firm that makes dishes prepared with excellent raw material; Joselín Sobaos Pasiegos y Quesadas is responsible for the best “sobaos”, a delicacy made of dough, white sugar and butter, with the best flavor; and Salami makes sausages and tripe without gluten and without lactose, its star products.
Other companies that are part of the Santander Fine Food consortium are El Capricho, which only produces Cantabrian anchovies, and bonito del Norte; the artisan cheesemaker Javier Campo, dedicated to the manufacture of cheese with its own designation of origin, Picón Bejes-Tresviso; Arándanos Campoberry, whose slogan, “Good by nature” already says it all; and the Destilería Siderit, which makes handmade gin and vodka thanks to a distinctive glass distillation process that is unique in the world.
